A Nutty Salad

A fresh, crunchy, protein-packed salad with a toasty peanut twist.

Ingredients

  • 1 cup mixed lettuce (romaine, butter lettuce, or spinach)

  • ½ cup shredded carrots

  • ½ cup cucumber slices

  • ½ cup cherry tomatoes, halved

  • ¼ cup red onions, thinly sliced

  • ½ cup Zenfix Roasted Peanuts

  • ¼ cup feta cheese or grilled halloumi (optional)

  • 1 ripe avocado, sliced

Dressing

  • 2 tbsp olive oil

  • 1 tbsp lime or lemon juice

  • 1 tsp honey

  • 1 tsp soy sauce

  • 1 clove garlic, minced

  • Salt & pepper to taste

Instructions

  1. In a bowl, combine lettuce, carrots, cucumber, cherry tomatoes and red onions.

  2. Whisk together the dressing ingredients in a small cup.

  3. Pour the dressing over the salad and toss lightly.

  4. Top with avocado slices and Zenfix Roasted Peanuts for crunch.

  5. Add feta/halloumi if desired.

  6. Serve immediately.
