A fresh, crunchy, protein-packed salad with a toasty peanut twist.
Ingredients

1 cup mixed lettuce (romaine, butter lettuce, or spinach)

½ cup shredded carrots

½ cup cucumber slices
-
½ cup cherry tomatoes, halved
-
¼ cup red onions, thinly sliced
-
½ cup Zenfix Roasted Peanuts
-
¼ cup feta cheese or grilled halloumi (optional)
-
1 ripe avocado, sliced
Dressing
-
2 tbsp olive oil
-
1 tbsp lime or lemon juice
-
1 tsp honey
-
1 tsp soy sauce
-
1 clove garlic, minced
-
Salt & pepper to taste
Instructions

In a bowl, combine lettuce, carrots, cucumber, cherry tomatoes and red onions.

Whisk together the dressing ingredients in a small cup.

Pour the dressing over the salad and toss lightly.

Top with avocado slices and Zenfix Roasted Peanuts for crunch.

Add feta/halloumi if desired.

Serve immediately.
